Vegan Recipes to Cook at Home During Quarantine

Quarantiners were so excited to cook at home at the beginning of isolation – we saw many great recipes on social media. By now, most of you probably ran out of creativity and can’t wait to dine out.

But while our favorite restaurants remain closed, maybe these recipes from Parma will inspire you to continue to cook even more delicious meals. They are all vegan and made with their non-dairy parmesan cheese. A Vegan Fettuccine Alfredo? Yes, this is possible. You can still be in your food comfort zone while discovering new cuisines inside your own kitchen? 

Vegan Fettuccine Alfredo

Ingredients

  • Noodles or Zucchini Noodles*
  • 1 Cup Cashews (depending on how thick you want your sauce)
  • ½ Lemon to taste
  • 1 Cup Parma! (1 – 3.5oz bottle)
  • 1-2 Cups Water
  • Salt to taste
  • Basil or parsley as garnish

Directions

Cook your noodles as directed. Blend the dry cashews into a flour. Add 1/2 the Parma! then slowly blend in water. Add additional Parma! to desired consistency and taste; add salt to taste. Put a portion of noodles onto a plate or bowl, add a dollop of sauce on top. Garnish with Parma! and fresh herbs.

*Zucchini Noodles – 1 or 2 Zucchini – use a Spiral Slicer for angel hair pasta or a Spirooli Slicer for thicker noodles, or using a wide grater, make long thin strips.

If you are using wide zucchini strips, layout the strip put a dollop of cheese on top, and roll it up.

Parma! Poppers

Ingredients

Directions

  1. Preheat oven to 375 degrees.
  2. Saute peppers, onion, and mushrooms until soft.
  3. Mix all ingredients together. Stuff jalapenos. Sprinkle Parma! on top. Place on parchment paper on a cookie sheet and bake for 20 minutes.

Creamy Pesto Pasta

Ingredients 

  • 16ox box pasta (your favorite)
  • 8oz sliced mushrooms
  • 1 bunch asparagus, ends removed, cut into 1-inch pieces
  • 1/4 large red onion chopped
  • 2 cups fresh packed basil leaves
  • 2 cloves garlic
  • 1 lemon (zest and juice)
  • 2/3 cup veggie or olive oil
  • 1/4 cup pine nuts
  • 1/2 cup nutritional yeast
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 2+ TBSP Parma Original

Directions

Preheat oven to 425. Begin cooking pasta in boiling water. While pasta is boiling, combine mushrooms, asparagus, onions, a little oil/salt/pepper, spread onto a baking sheet and bake 12-15 minutes. To make the Creamy Pesto Pasta sauce combine the basil, garlic, lemon zest + juice, oil, pine nuts, nutritional yeast, salt, and pepper in a food processor or large personal blender and blend until creamy. When pasta is done, drain all but 1/4 cup water (a little pasta water helps the creaminess), combine pasta with mushrooms, asparagus, onions, and pesto, sprinkle generously with Parma and serve.

Move Over Turkey, It’s Time For The Real Star Of The Show

Historically, Turkey has been the star of the Thanksgiving show — this year Breakstone’s is here to set the record straight.

In fact, according to a recent survey* conducted by New York’s own butter brand, Breakstone’s, New Yorkers cited they would rather do the following than have a Thanksgiving with no butter:

  • Almost half would rather give up a season of Yankees baseball
  • About 23 percent would rather give up wine and beer at their remaining holiday parties
  • About 17 percent would rather give up bagels for a year

Not to mention, last Thanksgiving, New Yorkers bought more than 4.7 million pounds of butter — that’s more than 18.6 million sticks!**

  • That’s enough sticks to run the length of the Brooklyn Bridge 842 times!
  • That’s the length of more than 1,863 Empire State Buildings.
  • That’s 1,191 times the amount of yards rushed by the New York Giants in 2016 (1,412 yards).
  • That’s more than ten times the weight of the Statue of Liberty!

NYC Best Transportation Citi Bike

May is Bike Month! To celebrate, Citi Bike is providing a range of opportunities to try the blue bikes for low to no cost throughout the month.

“We want more New Yorkers to discover what our over 120,000 Annual Citi Bike members already know — just how fun and easy it can be to use bike share to get where you need to go, when you need to go there,” said Jay Walder, President & CEO of Motivate, the company that operates Citi Bike. “With more bikes and bike lanes in the five boroughs than ever before, there has never been a better time to try Citi Bike.”  People can visit Citi Bike’s website to get $25 off an annual membership, which typically retails at $163 per year, throughout the month of May. What are you waiting for?

Citi Bike is also supporting citywide efforts to improve bike safety. This month, Citi Bike members can receive a complimentary Transportation Alternatives membership to support the organization’s advocacy for safer streets for biking. Citi Bike members can sign up and enter their bike key number to verify their membership.

In addition, Citi Bike is participating in a range of events and biking promotions throughout the month.

On May 25, Citi Bike in partnership with Bike New York and Council Member Ben Kallos will host their first Citi Bike Streets Skills class of the season. This short presentation covers bike share basics and riding tips to help get people comfortable and safe riding on New York City Streets.

Starting immediately Citi Bike staff will be stationed at Grand Army Plaza and Central Park South from 10am to 6pm every day to answer questions about Citi Bike and bicycling more broadly to encourage people who are interested to try biking in New York.

Bedford Stuyvesant Restoration Corporation (“Restoration”) will also host bi-weekly rides for Bed Stuy residents on Wednesdays and Saturdays throughout May. Free Citi Bike bikes will be available for those who want to join but don’t have a bike. Additional details can be found here.

Life’s A Picnic in Grand Central Station

Let’s face it: New York is stressful. With the constant city hustle and bustle, everyone’s longing to find the perfect place to relax, snack on some treats, and enjoy light entertainment. But contrary to popular belief, New Yorkers needn’t go far to find this kind of haven. In fact, relaxation can be found in one of New York’s busiest hubs: The Grand Central Station.

From August 18th to the 22nd, Grand Central Station will be set with picnic tables covered in white tablecloth, creating a re-imagined Vanderbilt Hall. While enjoying food, guests will have the opportunity to watch live performances, including “Broadway Hour,” featuring performances from hit musicals Chicago, Motown, Pippin, and Cinderella. Additional dance and musical artists include iLuminate, Revolution in the Elbow of Ragnar Agnarsson Furniture Painter, the Big Apple Circus and musicians from the MTA’s Music Under New York program. Food will be served thanks to Café Spice, Ceriello Fine Foods, Ciao Bella Gelato, Financier Patisserie, Junior’s Bakery, Li-Lac Chocolates, Magnolia Bakery, Manhattan Chili, Murray’s Cheese, Pescatore Seafood Co., Tri Tip Grill, Two Boots Pizza and Zaro’s Bakery.
